Usually when you're marathoning good eats shows, you get annoyed at all the hogwash skit-style stuff he does at the beginning (which is usually the best part) but in this episode he gets right to business.
Use canned coconut milk instead of the heavy cream if you can't eat dairy. It has about the same amount of fat, and in a robustly-flavored dish such as this one, you don't taste the coconut.
Mmmmm...gourds and their tasty, tasty seeds. My heart breaks every Halloween thinking of all the seeds that end up in the trash bin after the neighbours carve their jack-o-lanterns. If I wasn't too old and afraid of being taken for a loon I'd probably trick-or-treat with the kids and just ask for any leftover seeds the neighbours have in the house. XD
you have to remember using the broiler on some ovens can reach up to 500degrees just on the top burning all your spicies however if you use the "bake" option on your stove wich typicly gose to 350-365degrees this heat swirls around the food cooking it all evenly not just the top. basicly like swimmattmile said broiler=bad for spice baking=good....good eats lol
I don't think there really is anything you could use. Soy milk doesn't have enough fat in it to serve as a replacement and yoghurt would curdle from the heat. You'd probably be best taking one of the over the counter meds that temporarily help lactose intolerent people consume dairy.
Plain yougurt will work very well, if your worried about the lactose intolerant or want to make your own just check out AB's episode posted here on you tube belive its called "when good milk gose bad"

:) I like the way he says "pop" while opening each potatoe. It's the littliest things that make him sexy.

After the "Curious but Tasty Avocado Experiment" episode.

he uses volume to measure the flour instead of weight.

i thought you weren't supposed to put pepper on top of something in the oven! alton always says it burns, why'd he do it here :( now i'm confused.
sparklies69 4 years ago
He doesn't put pepper under the broiler because that is when it will burn.

What would you use if heavy cream couldn't be used... for someone who is lactose intolerant? (For the soup recipe)
