Something i've always wondered - is it technically possible to set up Stealth Rocks, Spikes AND toxic spikes? or are you limited to one "Damage on entry" move being in effect at a time?

Yes you are able to set up stealth rock, toxic spikes, and 3 layers of spikes

Empoleon. He can take a lot of special damage and can even survive heavy physical damage. Sure, he's weak to the most common used types in the game: Fighting, Electric and Ground; but he resists everything else or takes it neutral. Gliscor is the perfect partner for him IMO.
