  • I'm making this tomorrow!! Betty I just want to tell you that I love your videos so much! Thank you from the bottom of my heart for sharing all your wonderful recipes with the world of You Tube!! You are amazing.

  • mmmhh lovely!

  • Betty, I really enjoyed the information and the education you provided, and a non-complicated recipe that will hopefully lead to my supper this evening. You are a lovely lady with a simple cooking style (good for guys like me with no talent) not to mention a huge credit to YouTube cooking resources. Thank You ! I hope mine turns out as well as yours did.

  • @rljjlove1 Yes, ricotta cheese is wonderful for this recipe!

    --Betty :)

  • Making this for dinner tonight for my family, I know they will love it because they love everything that I make of yours!!!!

  • @CupcakeSaraKai I hope your family loved the casserole!

    --Betty :)

  • Betty, how do you stay so thin and fit looking? If I was around your delicious cooking everyday I would be the size of a house, lol:) You're awesome by the way!!!!!

  • @SuperStankazz Thanks for the great compliment! I only allow myself small portions, except on special occasions.

    --Betty :)

  • hi betty. ive never tried cottage cheese but im into the basic cheeses. i hate blue cheese. i love cheddar, Parmesan, cream cheese, Swiss ect.. do you think ill be able to eat cottage?

  • @MultiButtholes You should be able to eat cottage cheese, but if you are unsure, just substitute cut-up cream cheese in the place of it in your recipe.

    --Betty :)

  • Hi betty i need a simple easy dish that will freeze well as i work full time and dont have much time, do u have any good ideas for me, Btw i am from Sydney Australia and i love your videos : )

  • @pieterjames02 Most of the casseroles in bettyskitchen freeze well. One of my favorites is Parmesan Chicken with Wild Rice. It makes a very large casserole, but you could apportion it into covered plastic containers and have several meals. To reheat, just add a little water and slowly heat over low heat, stirring occasionally. You can do this with other casseroles, as well.

    --Betty :)

  • Looks so good cant wait to try it out

  • @LoveNTheTragedy I hope you enjoy it! Thanks for commenting!

    --Betty :)

  • can i replace the noodles with macaroni?? :)

  • @sheila92lala Yes, that will be great!

    --Betty :)

  • you have the greatest casserole recipes!

  • @laurysocheerful Thanks! It's easy to come up with lots of combinations that complement each other. Thanks for your nice comment! I really appreciate it!

    --Betty :)

  • We made this one for supper last night and it is my new FAVORITE go to casserole meal! OMG it tastes WONDERFUL! I was not sure about it as there is no mozzarella cheese and I 'thought' that was a given until eating this recipe! YUM YUM YUM YUM YUM YUM!!! My sauce was basic so I added fresh peppers and onions but WOW Giada doesn't have a thing on this winner Betty! WTG!

  • @sharoned07 Thanks for the great feedback! I really appreciate it! I like your addition of fresh peppers and onions.

    --Betty :)

  • Hi Betty, if you could indicate how many servings you are making with each dish that would be great. Sometimes it is clear you are cooking for two, but other times I am wondering if you are cooking for perhaps 4 to 6 people. Thanks, love this dish by the way!

  • @dekerranda Thanks for your nice comment. I know it would be helpful for me to give the number of people it would serve. I have avoided doing that, because it depends on whether you are serving it to children or adults, and also whether it is the main dish of a meal or a side dish. I will see if I can start giving more information about that.

    --Betty :)

  • Hi Betty! I enjoy your videos and so far all of your recipes! I have one question though... How come you never try a bite when you are done in front of the camera for us? Call me odd but I want to see a cook ENJOY a bite of the finished product!!!

    Thanks!

  • @sharoned07 I usually do take a taste at the end of the videos that I make nowadays. This video is a year old, and I was tasting a few back then--not all.

    --Betty :)

  • om nom nom!!

  • Must have been a Long Island Iced Tea...

  • Thank you so much I will do that and thanks for answering me :)

  • Btw how do I get ur cookbook?

  • @TheMakeupjunkie23 Go to lulu.com and seach for bettyskitchen. You will see a picture and the description of "A Year in bettyskitchen."

    --Betty :)

  • I have made this recipe a few times. My family loves it. Thank you for all ur recipes u have helped me alot. Keep the recipes coming Betty ur great

  • Did you cook the noodles until al-dente or did you undercook it since it was going in the oven for extra cooking?

    BTW,looks yummy!

  • @Toymit I try to cook the noodles a little less than done, because, like you said, they will be baked in the oven.

    --Betty :)

  • Yum! Thanks for the recipe, I think I'm going to try it tonight! I was looking for something quick, easy and yummy so this looks like a winner! I too am going to use FF ingredients! Thanks again and great video! :)

  • I tried this recipe last night with the family, and I must say that it's definitely a winner! I did change one ingredient, though. I subsituted ricotta cheese for the cottage cheese since none of us like cottage cheese. I also made this very lowfat by using fat free cream cheese, ff ricotta, ff sour cream, reduced fat parmesan, and 95% lean ground beef.. my family had no clue it was all lowfat, which is a HUGE plus. =)

  • @DeeFrootloop Thanks for your wonderful feedback! I love the way you substituted FF items! I do that consistently for my family, and it really adds up in the long run! Thanks for your sweet comment!

    --Betty :)

  • You're very welcome!

I always try substituting fat free ingredients, or at the very least, reduced fat instead of full fat. For the most part, I only run into problems with baked goods every now and then.

    - Dee =)

  • this is for dinner on sunday! (I only get to cook on wednesdays and sundays due to my work schedule) :-(

  • I hope you enjoyed the Italian casserole! Thanks for commenting!

    --Betty :)

  • I did make this last sunday and it was so good! I've never used cream cheese in a dish like this and it gave it such a good flavor. My husband Tony and I enjoyed it very much and we had enough for leftovers the next night! BTW...I received your cook book last week and I am enjoying it very much! My compliments and congratulations on wonderful book!

  • No--I guess I was just stumbling over my words. I don't use a script, you know! Thanks for your comment!

    --Betty :)

  • That would certainly fit the bill over here in the UK at the moment as we are having very cold weather with plenty of snow.

    Thankyou!

    --Betty :)

  • Betty & Rick, Hello from Scottsdale, AZ. I look forward to your videos. I check every day to see if there's a new one. May I state that you must have quite an extensive wardrobe as you wear a different outfit with each video.

I'm sure I would be speaking for many fans, if I were to request that Rick video tape your pre-taping meeting, as you prepare and plan for the actual taping. It would be interesting, sort of like a reality show, with you and Rick interacting. Loved your bloopers!

  • Thanks for your lovely comment! Rick and I don't do a lot of discussion about our taping sessions. We just decide what we want to cook (based on what we would like to eat , or on what seems to be lacking in our bettyskitchen recipes), and then we chop and slice and dice, with my main responsbility being trying to remember how much of each ingredient we have measured out! It's not a very professional approach, but we have fun doing it, and we have lots of interesting meals to eat!

    --Betty :)

  • would it taste just as good if you substituted cottage cheese for ricotta? not a fan of cottage cheese :S

  • Ricotta cheese would be fine!

    --Betty :)

  • Sweety Betty... don't bother... when you decide to came in Italy i can be helpful about your travel and location where stay!

ciao ciao from lago Maggiore, about an hour over Milan!

  • I will keep that in mind, Iago!

    ciao,

    --Betty :)

  • The recipe i've been waiting for... thnx betty!! :)

  • I think this recipe will be what a lot of people are looking for after the holidays--or any time of the year. It's easy, tasty, and economical! Thanks for your lovely comment!

    --Betty :)

  • Welcome :)

  • Hey! This video made it to like #33 on:

How To/Most Popular!!! The highest I have ever seen a cooking show get!

    Great job!

  • Congrats to Betty!

  • Thanks! (I'm a little embarrassed, because there doesn't seem to be that many views or comments!) But, thanks to all of you!!!

    --Betty :)

  • That happened because of all of YOU! Thanks so much, everyone! And, thanks for noticing, Jimbo! I would never have known, otherwise! You're the best!

    --Betty :)

  • Mmm this looks super yummy. Thanks for sharing:0)

  • You are quite welcome! I hope you enjoy the recipe!

    --Betty :)

  • I'm thinking this would be a nice recipe to use ground chicken or turkey in, as well. It's hard to find recipes that have enough flavor to incorporate them, but I think this may be the ticket!

  • Yes, Patsy, the Italian sauce is so dominating, that you would never notice the ground beef being changed to ground chicken or turkey! Thanks for a great tip for us all!

    --Betty :)

  • why not come in italy to eat the original one ?

in summer 2010 i'm in lago Maggiore, happy to eat with you some italian dish!!!

    ciao ciao Betty!!!

  • I would love to visit Italy! Maybe someday I will!

    --Betty :)

  • Good to see you are using fat-free there. I am an absolute sucker for low-fat brands (dips etc) and never but them unless they are.

  • The main way I keep my weight where it is, is that I do my own cooking, and I know exactly how much fat and sugar I'm eating. If it has a lot of fat and sugar, I just have a small portion!

    --Betty :)

  • Thank you Betty!!

Im going to make this today thanks for sharing

  • That's great! I hope it comes out great for you! Thanks for the comment!

    --Betty :)

  • all your dishes make me very hungry. =)

  • Thanks for the compliment!

    --Betty :)

  • Looks like a 5 star delish to me, as always! Thanks Betty for the recipe, will be a soon to try dish for me! Hugs, Angie

  • You are quite welcome, Angie! I hope you enjoy the recipe! Have a great evening!

    --Betty :)

    --Betty :)

  • This looks great Ms. Betty, it's going in my favs. Happy New Year by the way!

  • Thanks! I hope you enjoy the recipe! Belated Happy New Year to you!

    --Betty :)

  • I'm so glad to see you back and enjoyed looking at your cruise that you and your husband took. I know you enjoyed not having to cook and clean up the dishes! The food looked great. Once again...glad to see you back.

  • Yes, it was a nice getaway--but I'm glad to be back! Thanks for your sweet comment!

    --Betty :)

  • Yes, just like shaved coconut. . . only much chessier. It looks very like tiny little sheets. Anyway, it melts quite nicely, better than either grated or shredded Parmesan. . . which rather resists melting.

  • I cant find the fudge agh betty I was looking forward to making this but I dont have the fudge to complete the meal. Sorry.

  • Well, I guess you *could* make the meal without fudge. Thanks for your comment!

    --Betty :)

  • Well, I guess you *could* make the meal without the fudge. Thanks for your comment!

    --Betty :)

  • nice vid, looks goooooood! Thanks for sharing!

  • Thanks! I hope you enjoy this recipe! Thanks for your kindness with regard to suggestions and interest in my channel, also!

    --Betty :)

  • I get shredded Parmesan cheese already shredded into little pieces. If you get Parmesan cheese in block form, you will need to use a kitchen grater to shred it.

    --Betty :)

  • The advantage of shredding or shaving one's own cheese is that you avoid the added cellulose, which is meant to keep it from caking together, but also retards it's melting properly. Pre-shredded cheese has only the advantage of convenience in comparison.

  • i didnt know that! its crazy what they put in our food stuff! thanks for the info :)

  • Yet another favorited! A keeper. BTW, Prego rocks compared to all the others. I won't even consider anything else, and yes, I tried them all.

  • Thanks for your comments! In my opinion, Prego *is* the best!

    --Betty :)

  • Betty, good to see you're BEEFING up your videos for 2010! Mouth watering!

  • Yes, my recipes will be a little different now that the holiday season is over! Thanks for your comment!

    --Betty :)

  • yummmm !!! i am so gonna make this thank you

  • That's great! I hope you like it! Thanks for commenting!

    --Betty :)

  • that all looks so good. I'm going over to your house tonight for dinner. I don't think i can make it in time though. New Mexico to Kentucky might take a while. ha ha ha. Thanks Betty!

  • You didn't make it in time--maybe you're still on your way. Oh, the casserole is all gone now! Thanks for your lovely comment!

    --Betty :)

  • look's great !!!

  • Thanks! I hope you enjoy the recipe!

    --Betty :)

  • Ohh, I see. You wanted to save some calories on the dairy products so that you could have your fudge.

I love your hair turned under that way btw.

It isn't true that you can use Any noodles, as I can attest that Japanese Buckwheat noodles don't work particularly well. LOL. Shaved Parmesan works even better than shredded, if you can find it.

  • Thanks for commenting!

    --Betty :)

  • You are quite welcome. . .however, some cowardly little rats seem fond of giving my comments thumbs down.

  • i like to shave my own too, personally. it lasts longer too (not that it needs to really last any longer than the "forever" it seems to last...lol) I love buckwheat noodles! but they don't bake well at all. turn to mush. so do brown rice noodles sometimes....cant have it all i guess!

  • On my menu list to try soon.

  • I hope you enjoy it! Thanks for your nice comment! I hope your holiday season with your family was wonderful!

    --Betty :)

  • Good recipe. I can see where I can sub low fat for the dairy and maybe rinse the meat just a little to cut calories. I have that Holiday baby fat to lose. LOL

  • @evegpt oh no! lol

when you rinse the meat, you lose some of the flavor. just drain the crap out of it. i sometimes pat and squeeze it with paper towels and it removes any left over grease!

  • I do this a lot, too. I do it with browned ground beef, and even moreso with browned Italian or pork sausage. It really helps!

    --Betty :)

  • Yes, you can cut down the fat on the cheeses and sour cream, and just use lean ground beef, maybe only half of a pound.

    --Betty :)

  • it looks so delicious... :) maybe this is my favourite food :)

  • I think you will enjoy it! Thanks for your lovely comment!

    --Betty :)

  • I love your videos and can't wait to try this recipee!!

  • Thanks! I hope you enjoy this recipe!
