@MultiButtholes You should be able to eat cottage cheese, but if you are unsure, just substitute cut-up cream cheese in the place of it in your recipe.

It makes a very large casserole, but you could apportion it into covered plastic containers and have several meals. To reheat, just add a little water and slowly heat over low heat, stirring occasionally. You can do this with other casseroles, as well.

I was not sure about it as there is no mozzarella cheese and I 'thought' that was a given until eating this recipe! YUM YUM YUM YUM YUM YUM!!! My sauce was basic so I added fresh peppers and onions but WOW Giada doesn't have a thing on this winner Betty! WTG!

@dekerranda Thanks for your nice comment. I know it would be helpful for me to give the number of people it would serve. I have avoided doing that, because it depends on whether you are serving it to children or adults, and also whether it is the main dish of a meal or a side dish. I will see if I can start giving more information about that.

I tried this recipe last night with the family, and I must say that it's definitely a winner! I did change one ingredient, though. I subsituted ricotta cheese for the cottage cheese since none of us like cottage cheese. I also made this very lowfat by using fat free cream cheese, ff ricotta, ff sour cream, reduced fat parmesan, and 95% lean ground beef.. my family had no clue it was all lowfat, which is a HUGE plus. =)

I did make this last sunday and it was so good! I've never used cream cheese in a dish like this and it gave it such a good flavor. Thanks for your lovely comment! Rick and I don't do a lot of discussion about our taping sessions. We just decide what we want to cook (based on what we would like to eat , or on what seems to be lacking in our bettyskitchen recipes), and then we chop and slice and dice, with my main responsbility being trying to remember how much of each ingredient we have measured out! It's not a very professional approach, but we have fun doing it, and we have lots of interesting meals to eat!

Yes, Patsy, the Italian sauce is so dominating, that you would never notice the ground beef being changed to ground chicken or turkey! Thanks for a great tip for us all!

Yes, just like shaved coconut. . . only much chessier. It looks very like tiny little sheets. Anyway, it melts quite nicely, better than either grated or shredded Parmesan. . . which rather resists melting.
I get shredded Parmesan cheese already shredded into little pieces. If you get Parmesan cheese in block form, you will need to use a kitchen grater to shred it.
The advantage of shredding or shaving one's own cheese is that you avoid the added cellulose, which is meant to keep it from caking together, but also retards it's melting properly. Pre-shredded cheese has only the advantage of convenience in comparison.

It isn't true that you can use Any noodles, as I can attest that Japanese Buckwheat noodles don't work particularly well. LOL. Shaved Parmesan works even better than shredded, if you can find it.
i like to shave my own too, personally. it lasts longer too (not that it needs to really last any longer than the "forever" it seems to last...lol) I love buckwheat noodles! but they don't bake well at all. turn to mush. so do brown rice noodles sometimes....cant have it all i guess!
Good recipe. I can see where I can sub low fat for the dairy and maybe rinse the meat just a little to cut calories. I have that Holiday baby fat to lose. LOL
when you rinse the meat, you lose some of the flavor. just drain the crap out of it. i sometimes pat and squeeze it with paper towels and it removes any left over grease!

i like to shave my own too, personally. it lasts longer too (not that it needs to really last any longer than the "forever" it seems to last...lol) I love buckwheat noodles! but they don't bake well at all. turn to mush. so do brown rice noodles sometimes....cant have it all i guess!

Good recipe. I can see where I can sub low fat for the dairy and maybe rinse the meat just a little to cut calories. I have that Holiday baby fat to lose. LOL

@evegpt oh no! lol
when you rinse the meat, you lose some of the flavor. just drain the crap out of it. i sometimes pat and squeeze it with paper towels and it removes any left over grease!

I do this a lot, too. I do it with browned ground beef, and even moreso with browned Italian or pork sausage. It really helps!

Yes, you can cut down the fat on the cheeses and sour cream, and just use lean ground beef, maybe only half of a pound.
