I'm part Chinese on my dad's side, so I'm only familiar with Cantonese style dishes. As far as I know adding pineapple is distinctly western. And although many Chinese restaurants use it these days, it is not the traditional way to make sweet and sour. Traditionally, honey and vinegar are used.
thats why its called PANLASANG PINOY it means "Filipino taste"...

You can not make a sweet and sour pork dish without pineapple.
I was born in China and S&S pork has always been one of my absolute favorite dish.
