Thank you for pointing that out, people these days, with no connection to the place their food comes from have some very odd ideas about what a farm animal is and is not.
I actually have a lot of respect for people like this woman, who are conscious about what they eat. I consider it a lot more cruel and desensitised, if people carelessly buy industrially produced meat, and don't give a fuck about how the animals were treated before they came to the shopping mall as ready-to-eat food.
i agree, most of people dont know anything about what they are eating i turned my diet in almost 90% vegetarian... i must say in my country there is not too much the concept of meat factory, there is real farms but as i was saying... i just eat meat when i NEED nutrients not kuz i can.
The flavour of older hens are more intense too. Does longer cooking time mellow out the flavour of the meat, or do you just roll with it and work with it by using bolder ingredients like red wine, tomato, etc?

I'd say really though, its no big deal as long as you have the right mind set.
A hen tastes different then a regular chicken, it's delicious in a soup, and I use it to make chicken pot pie. Don't forget to boil it for a long time, the meat will be thougher then a regular chicken. 20 minutes per pound, and you simmer it.

If you take a hen, it's a "poulet au vin". A "coq" is literally a cock or rooster. You can also use a capon.
