to modify the distance, change where the catapults main limb hits the piece that stops it from hitting the floor, and then get the proper spring for how much more or less you want the object to travel.. pretty simple!

hey nice catapult, I just built one based on your design. I did it on a spur of the moment thing, I put 2 hours into it. But I made it out of MDF (multiple desity fiberboard) so its not too sturdy, but it gets the job done. Also till I can get a spring im using a bunch of ruber bands. I will put a video up soon and video response it to yours.

MDF does not mean multiple density fiberboard is means medium density fiberboard by this you might mean chip board which is made from farly large chips of wood soaked in a resin and pressed into shape :-)
