  • Ah...sous vide has been around for forty years...en France.

  • Ask the fellows at The Fat Duck about sous vide. While I understand the concept, and the technique, and see where it is beneficial in enhancing the flavors and textures of certain items, for the vast majority of fad jumpers its an outbreak waiting to happen. Even a 3 star place that operates at the pinnacle is open to a potential problem...sous vide isn't some stunt that should be played with by every clown with a culinary certificate.

  • Why shouldnt it be played with by every clown with a culinary certificate? It seems even people uninterested in cooking could produce decent food this way without having to do anything skillful.

    Why is it bad if it becomes popular domestically? The health benefits and lack of skill required seem amazing plus points.
