I love some of the neat little touches. Like when Demoman does the "I'm watching you" animation, he only uses one finger when he points to his face. It's those little quirks of Valve's that make it fun.

Honestly, I'd like it if these were in the game. You know how satisfying it is to build a friendship with your teammates and help each other out? Pulling off these high fives would just make it better.

They probably didn't use them cause it'd be so hard to time, though.

@toadmyster2 Just because they aren't in the game now doesn't mean that they won't appear in a further update. My guess is that the people at Valve are still working on these taunts. From an animators stand point, I can tell you that having a physical (and believable) character interaction between two characters can be difficult as hell, and implementing it in an interactive game is even more troublesome.
