@noodlesmealey Yes, you can... add it at the beginning to the egg and potato mixture. The flavour of the nutmeg is not so strong and it's perfect on the omelette... anyway, you can also avoid it.

Then, in the XIX century, the french invaded Spain, bringing hard times with them.
Hard times included a shortage of potatoes, so they started making the tortilla without them, therefore calling it "tortilla a la francesa", or "french omelette".
@badkluster Creo que esta tortilla es típica italiana, no tiene nada que ver con la nuestra. Además, si te fijas, en inglés la llaman spanish omelette no potatoe omelette.

this is SPANISH recipe, Tortilla de patatas is more spanish than anything.
The only difference is that you put soo much oil to the tortilla.....

If you add a little vinegar into the water before boiling the potatoes it will help them stay whole.
