I would cut a small, but nice chunk of that off and put it into a cooking bag so it can be both well done and moist..
Just made this yesterday for Mother's Day. Turned out AWESOME. Got the tenderloin on sale for 8.99 a pound and wrapped with bacon like Aunt Peggy said. It took a long time to cook the two pieces I had - total of 5 pounds for 45 minutes but it was perfect and everyone raved about it. I gave all the credit to Paula and Peggy. Thanks for sharing.

The result just made me wince.... pan sear the tenderloin first in the bacon fat to give it a golden brown appearance, then add the salt and herbs... then place it in the oven, the over all presentation will be greatly enhanced
Expensive? You bet, mine just cost us $110.00! But I bought enough to feet 9-10 people. Had to buy 2 peices so all of it would be really considered the fillet, and not the less tasty, less tender parts. If you buy the entire un trimmed tenderloin, you can use the ends for stews etc. Make sure you have the butcher remove the silver skin. Merry Christmas folks!
