Actually, it's simply usually the case that you haven't cooked it long enough if they stay closed. It's a myth that mussels that stay closed must be dead: they can't be, since staying closed has to be done actively by the mussel's... muscle.
@UnOxonien If you have 40 mussels and they are all cooked at the same time and 3 haven't opened, then you obviously have cooked them all long enough and those 3 are bad. It isn't that hard to understand.
Love this vid, but strongly advise against cutting lime leaves. They are very hard and tough, and don't make for good eating. They are a flavouring, just like bay leaves, and need to be taken out after cooking. Leave them in one piece so you, or whoever is eating the dish, can fish them out easily.
DELISH. One point of disagreement, however: mussels that don't open after cooking absolutely can be eaten, just pry them open. Do throw away the ones that don't close when raw, though.

I absolutely love how her show takes place in her actual home. It's so.. real and inviting. The chefs on food network in USA, for example, just have these fake kitchens set up which is MEH.
@fujio I get what you mean—but not all Food Network shows take place in studio kitchens. Ina Garten, Guy Fieri, and Paula Deen film their shows in their own kitchens. I guess what makes Nigella so endearing is that you don't just see her kitchen the entire time. She sometimes would bring the camera to her pantry, her garden, even her bedroom.

Mussels that don't open when put into hot water means they were dead before cooking which means it is not fresh.
