it depends... Most of the time 'subs' are a direct translation of the dialog. Dubbing, they interpret and make it fit the dubbed language.

In the case of POTC, the subs Jack and co drink "ramu" or 'rum'... I can read enough to see that. However the dub, they drink a more Japanese drink. Sake.

i prefer subs, when watching something someting orignally in another language, cuz usually the dubs suck, cartoons can be an acception, since they are not real ppl, but hearing dubs is interesting nonetheless, like this one

one thing to keep in mind about Japanese dubbing is that they don't 'cast characters' they 'cast actors'

For instance Saori Yumiba is the dub voice for Keira Knightley, not "Elizabeth Swann" I have JPN dubbed Pride & Prejudice and Atonement as well.
