The writers kept coming up with ideas to introduce her in the series but all of them flopped since they couldn't find a way to keep her and Hades' relationship PG in a way or it just wouldn't fit with Hades' character, etc. Either way, her entire persona was dropped.

I think she's in the movie. Near the end, all the gods congratulate Hercules at Olympus's stairwell. She's the pink woman with the curved pink hair. That's what I pictured Persephone to look like, anyway.
