I don't recall which civilizations and what years / ages this happened but I do remember that fermented brews were much safer back then than the alternative of drinking the local water.
If I remember my history correct, some had a weaker ale / wine as a general daily drink and then they had a stronger ale / wine in the evening for merry making.

I'm a kit brewer that has just gone all grain i use a method known as Brew in a bag (biab) it's a one vessel brewing using a swiss voile polyester bag to put the grain it. have a look at it on youtube it's not a bad way to get started
on the flip side .. the canadian ministry of public health also states that binge drinking or alcoholic tendencies start at " 3 or more alcoholic beverages in one sitting , more than 3 times in a 7 day period " ... according to that .. i think about 90% of my friends are alcoholics ..
the Canadian Heart and Stroke research centre has for several years stated that its GREAT for the'ol ticker to have TWO alcoholic beverages per day .. just the relaxing properties and slowing the HR down along with the vasodialation and more oxygenated erythrocytes perfusing the heart allows it to not really heal .. but its just good .. beer makes your heart happy .. i cant fully explain it .. but any more than two is supposed ot be bad ..

My only suggestions are keep an eye on your temps, and use a good software app for creating your recipes. I use "BrewTarget" and it's great, you can really play with a lot of ideas, and it tells you if it it would be "malty or hoppy" as well as the usual ABV and even calories per serving. It's fun stuff. Ditch the cans, man! And have fun with your new gear! :)

Wow, this is gonna be a great series. You bring up a great point concerning the health benefits of drinking all grain beer as opposed to extract. However as soon as you surpass over 1 beer a day, the benefits go down the drain. How many of us are guilty of that lol?

I highly recommend using the BIAB all grain method. All grain beer with minimal investment.
