Later in the movie, it evolves into Snorlax to help Ash and Pikachu get over the swarm of malfunctioning machines. He might have mistaken that for May's Munchlax. For the record, that movie came b4 May caught her munchlax so it wasn't as if there was any moment where they were together and he could've seen that it wasn't HER munchlax evolving

Overall, May caught 7 Pokémon. When she was in Sinnoh, everyone of them was seen. But because you can only carry 6 Pokémon with you, she must have changed it out, and with the Trainer Card Maker I can´t show all 7 Pokémon at once.
