I think Applejack probably is the party's tank. High physical stats, low magic resistance, and can use her Lasso ability once per encounter to increase damage to a >pony sized target.

This actually fits Applejack quite well. No, not just because it's country music.

It portrays Applejack laid-back, sensivtive, kind and active nature very well, too.

Something about this just makes me think of the stampede stage in that old Lion King game. Just replace the wildebeests with cows, Simba with Applejack, and danger with friendship.

This'd be good battle music, I think. It's got that nice somewhat frantic beat to it throughout the song.
