Can you please tell me w/size hose is coming from the carboy? I just had the same problem w/my top popping off! Dam! I'm also thinking instead if putting it inside, w/about a bigger one that I can zip-tie over the top? Any thoughts?
I'd suggest putting a black tshirt over the carboy with a rubber band on the neck to keep out UV (even from flourescent lights!). Experiments show that just a few minutes of exposure will skunk yer brew.
We typically do keep it in the dark. It was just uncovered for the purpose of taking this video. This batch turned out sublime, incidentally, despite the many difficulties that plagued it initially.
It's also still a closed fermentation. If the hose is secure in the neck of the carboy and is submergerd there shouldn't be the danger that anything could fall into the fermenter that would out-compete the yeast.
That beer was a Belgian-style ale with a really violent fermentation. It was our only available means to release pressure as it had already blown off a small air lock. We've never had a problem with the blow off tubing, and that beer turned out awesome.
I'm glad it came out awesome. You should maybe invest in a stainless steel fermeneter just for how many gallons it can handle, it might come in handy in case you have another batch that over foams.
We only brew 5 gallons at a time. We have a large plastic fermenting bucket that has plenty of headspace and a larger 6 1/2 gallon carboy for a higher pressure fermentation also (but not before that particular batch). Although, I would like to keg my own beer eventually.
Not if the bucket has a sanitized liquid in it, like iodophor or bleach. I wouldn't use bleach because I'm too paranoid about suck back, but once a fermentation is going like that, there really is little to worry about. Once the yeast takes hold like that, you're in a good spot.

What is the red thing on top of your carboy?

It's a handle for easy lifting.

So would you buy that handle at a wine shop or did you improvise and use something else?

you carnt pick the carboy up with liquid IN... with this handle it will crack and brake

From what I have learned about fermeneting is that doing that "can" ruin the flavor of the beer and has small risk of contaminating it.
