I live in Australia and we don't have shortening so would I be able to use copha as a substitution? Or would butter or margarine be better? Please can someone let me know before Christmas!

Typically it has higher fat content than butter or margarine, and gives the dough the crumbly texture, that can be seen here, by prohibiting the production of long gluten strands.
There are lots of different gingerbread cookie recipes out there. Personally, I make my gingerbread men from premade, store bought dough. I may tackle homemade dough someday in the future. One thing I'd suggest is rolling them a little thicker and pressing in some raisins as buttons or eyes before baking. Being a spice cookie, I find gingerbread pairs better with raisins and other dried fruit rather than candies or other sugary sweets.

What a difference. My 14 year old son and his friends ate 4 each after I made them. We don't ice them though. Amazing cookies.

My mom and I, we usually never use any shortning or baking soda, as we never have these in the area that i live in.Instead we use butter, and instead of molasis we use pancake syrup (really thick kind). The gingerbread cookie dough turns out extremely different than shown on your video and it actually doubles/triples in size when baked and its soft! I'll try this one though, never hurt to test! Ty
As far as i know, only the taste of it will change. But where i live atm, we dont have molasis(h/e u spell it) so we only got thick syrup for it, and the cookies usually turn out nearly 3x their normal size, super soft, and just amazing! :D
