  • Another good way of browning the onions and sweetening the soup slightly is to use sugar when you saute the onions.

  • ok, so she didnt brown the bones in the oven to make the stock, this would be a reasonable quickie substitute if she added a bit of dry red wine to the broth,cracked pepper and lea and perrins to give the stock more depth.

  • Suggestion: Brown the onions with some vegetable oil. Do not use margarine or canola oil. At the end of browning add some butter for flavor and take off heat right away. Remember that butter oxidizes, burns easily and does not tolerate heat, unlike vegetable or peanut oil. Cheers, :)

  • @DeRex9 Just to be clear, canola oil is the US name for rape seed oil - it is merely a normal low saturate vegetable oil. Many chefs use a butter-plus-oil combo for the caramelizing onion slow fry stage - flavour from the butter while the oil raises the smoking point. :)

  • @EnoughWords Well, in a word: The French are French! They have great pride, style and romance in everything that they do, especially in their food and drink preparation and serving. This video sounded like it could have been done by wind-up doll, an actress or an automated voice, not a lover of food or cooking. It's pretty brash, if you know what I mean. You don't have to be French to see that (although it helps ... I'm part French.)

  • i tried onion soup before, but i didn't like it. the soup is more like water with rotten onion. the toast is soak up and disintegrated. not a good recipe dish for me

  • @starindamaking25 I can relate... however, I think any onion soup is much better with some type of booze in it (typically sherry). Another way to keep the bread from getting unpleasantly soggy is to leave it out to stale for a few hours before you toast it. And obviously, one can't forget to be liberal with the salt...

  • @LydiaCosmetics no, the reaction between the vegetable broth and the caramelized onions produces a bitter alkaloid that makes the soup extremely inedible and will kill you if you insist on eating it.........

  • @durgaaa You can but it would lack the deep richness of the beef broth. Chicken can go with cheese but chicken broth doesnt mesh too well with a swiss. I mean try it if you like chicken more but nothing cuts the onion and cheese as well as a bit of white wine and beef broth. Also instead of water do more beef broth, when left to simmer for a long time the flavors become one a lot better and the house permiates with the smell of amazing soup. I kinda wanna try some shrooms in mine.

  • @durgaaa For this one. The acid is less harsh in the white for this soup combo. If it were something with a bit more substance like a stew then its the opposite cause it just adds a sharp flavor that ties in the food vs cutting things down.

  • @doraji1027 -for rich flavor, I would use half olive oil, half butter, but olive oil is really not good for cooking because its flavor is so delicious. There is a LOT of heat applied to this recipe! 45 min of carmelizing onions, plus 15 more mins, heat broth to boil, then simmer 30 min, then bake with cheese 12 more minutes. All that time the olive oil is cooking to death! There really is no substitute for the flavor of butter. Coconut oil is healthy and best for heat but has no flavor.

  • this looks good. our recipe is a bit different though... we do use the onions and we add seasoning and croutons. then we put a slice of cheese on the top (it covers the whole thing) and the steam underneath melts it. anyways, i have to try THIS  recipe. it looks great!

  • No recipe that calls for margarine instead of butter could be that good. Margarine isn't even better for you, in fact it's worse -- it is essentially 100% pure trans fat. Not only that, it doesn't taste even half as good. And 4 parts water to 1 part beef stock? Bah! Fail!

  • @gawdzila if it is a condensed beef stock then all you would be doing is adding volume to the soup. Depends how you make your beef stock. Don't use store-bought and you will be fine.

  • @GothChilde6969 in any case, add 1/4 cup sherry wine and 1 tbsp sherry vinegar, and you can sub out the 4 cups water : 1 cup stock with 3 cups beef stock 2 cups chicken stock 1 cup water and the taste is better imho.

  • Afterwards add the stock to the carmalised onions along with a glass of white wine. Simmer for an hour and adjust the seasoning. add a dash of brandy. Toast french bread on both sides, rub a cut garlc clove onto the top side and butter. Add grated Gruyere cheese and toast under grill until bubing. Add soupto bowls and add the toasted cheese crouton. Enjy. Bon appetite.

  • Baaah margarine?! Margarine is made of vegetable oil, butter from cream. That alone makes a LOT of difference!

  • My way of making them. Melt butter in large pot. Add 2 cloves of Garlic, along with 4 to 6 Onions, a pinch of salt and black pepper and cook for 15 mins over a low heat. At this point add 1/2 teaspoon of sugar to carmalise the onions. At this point you add the stock.(Beforehand you would have browned in the oven 1 large marrowbone. When i has browned add 4 pints of water, salt and pepper and a bay leave, brugt to the biol and simmered for p to 4 hours, removing any accumualated scum).

    They will caramelize before burning. Also, by adding the salt, it will draw the liquid out which creates a lay between the heat and the onions to prevent charing.

  • except margarine is exactly like butter except instead of milkfat, its uses vegetable fat. butter clarified is just oil like canola and/or olive oil to make a vegetable butter basically. the coloring is fake, bleach broccoli or dye cauliflower in leaf tincture. different species but your still getting the same thing,margarine is to butter as what cauliflower is to broccoli. do you rly care which except for specific applications?
