@howchildish Why throw away something that can't be sold in markets when you can use it for other things? Sausages makes sense in that they can be done with pieces of meat that aren't suitable for restaurants and kitchens. You still need quality meat to make quality sausages.

And, again, pig intestines are readily available and very "natural" and it's better to use them than to throw them away since they actually work well in sausage making.
