You should have rolled the dough into balls, covered them with a towel and let them rest again for 5 minutes and then cooked them on upside down cookie sheet, not a deep dish pan. That is why they were so flat. When you use the deep pan, the heat has to work harder to do the work because of the depth of the pan. Just sayin'.

I'd like to try doing a pita bread using Chia Flour. Also, maybe substitute macadamia nut oil for the olive oil, and use generous amounts of black cumin seeds (ala naan). For the sugar.. I'd like to use stevia but I'm not sure if the yeast will work with it. Is my Frankenstein pita idea half baked?
