  • The supermarkets are easier to get up and running without having to mess with having a rail-road and box for the rail road. Thats the main reason for this move towards box beef. Super markets get old buildings cost are lowered on the front in.

  • I cut meat for years, but it was in a retail setting. I merchandised the meat from the "boxed" beef that we recieved for the consumer. I couldn't break a side of beef down properly if my life depended on it. Now, with the help of these videos, that Black Angus out in the pasture might be in trouble. Thanks for the videos and for SLOWING the process down. Any of you computer heros that are talking smack on here, bring it on if you want to go head to head on merchandising the primals for profit.

  • Let me tell you so called "Meat Cutters" something. This Black man has probably been cutting meat since most of ya'll were still in your daddys nut sack. He is deffinately in slow motion for the educational purposes in a classroom enviroment. I've got plenty of money and would bet a majority of it, that he would wipe yall's ass with his skills, head to head. What I would like to know, is where is your video's??? How about you quit flapping your soup coolers and shut up.

  • idk i work in a meatroom but im not a butcher just a meatcutter and i havce to ask anybody else in this biz howmany ppl get chuck rolls in and have alot of tumors in them?

  • @ak47yawhy i've only seen a couple of tumors in chuck rolls, i see a lot more in pork shoulders and loins

  • Awesome video! I'm a sushi chef myself and I don't get to work with beef as often as I'd like to. This video is really educational and beneficial. Thank you for sharing this with us all.  It's also awesome watching them use a western blade which is more flexible whereas the japanese knives are made out of steel, so there's no give at all.

  • I agree with ap2007 the beast must be stress free that's why it's best if you can to slaughter the animal first thing after it's rested and before it'd moved around to much as the meat is relaxed and the musels have lower levels of acid build up. that makes for a much tender meat. But as the day moves on by keeping the animal Quite as you can will still help with a stress free animal to some part.

  • A good master butcher can debone a whole cow in 30 min or less and that is pulling all the primal cuts.

  • @angus1722 hi i am 22 years and made my masters degree as butcher in germany. and 30 mins or less ? haha may u can but not white so the bone skin is on the meat ... u might do it with a cow but we had 3 h time to debone a half cow white i was done in 2.30 so idk ;-)

  • @TheHeartofEurope im 22 years old as well but i didnt go to school for it... i was kind of born into it, my dad has been cutting meat for 30+ years and i learned from the best (him) who learned from a french guy who lived in maine lol im curious to what a high end masters degree butcher get paid... i didnt even graduate and i consider myself to be an excellent cutter compared to this clumsy slashing baffoon, you wanna see a real butchers come to Leona Meats in PA. its just me and my dad cutting

  • Only complaint so far was when he trimmed the Top Butt, he way overtrimmed. He took it down to lean meat. 1/4 trim is acceptable.

  • Hes ok for a shop butcher but rough as guts for a beef boner. Slow also. Hanging the 4 by the shank and boning is very quick. Full greak down including neck and rib cage should come inside 2min 30sec. on the average.

  • I'm a meat cutter in Alberta, but we get everything broken down the way this guy is doing it. and no one has really showed me where everything comes from, so this is VERY helpful when some customer askes a question. So thanks to the guy who made the video and the guy who put it on here..

  • You and I have hashed this out, but for everyone else out there this video was purely educational. I've had hundreds of repsonses thanking me for this video. Universities teaching young animal scientist how to properly break down a beef animal are using this and also culinary schools a like. If you are going to do it you might as well learn how to do it right........
