We select our blackberries a little differently. For one thing, we pick them growing wild in our area. Also, my Mom, now gone but a wonderful baker, always had us pick a certain quantity of half ripe berries. Yes, they aren't as sweet as the ripe ones but they put a certain flavor into her pies that all ripe ones couldn't match. You have to experiment to get the right blend :)
