I am a cake decorator and i always make sure that my hair is up or out of the way.... NEVER down. Would you like a hair in your cupcake or food? Come on people... why dont you just dip the tops of the cupcakes in the ganache? using a spoon gets it all over your hands.

@muncher541 I think I'd do the same. I know that when I make Ina's coconut cupcakes, instead of sprinkling them with the coconut, as the recipie says, I spread my icing and then dip into the coconut. It's much easier that way.
