I like the idea of putting the steak right on the coals for the sear, but also agree with Sho81 that some smoke on the steaks is needed.
I prefer to just get the fire really hot to start with and sear the steaks. Then move them to the side away from the center where I have the coals. Then put the lid on and close down the air inlets halfway. Leave outlets wide open to avoid creosote if you're using any smoking wood. Only need to open it a few times to rotate and flip the steaks until done
all he did was cook a common "cave man steak" that has been done for millions of years, he didnt create any new way of cooking steak. just because he is famous doesnt mean he created it. i would put my best steak up against his, gordon ramsay, or any tv pro any day of the year. texans cook the best beef in the world

You make quite the bold claim in saying what you have, given that I am almost certain you have not tasted every piece of beef throughout the entirety of the world.

So I was looking forward to the "logic" behind grilling meat - what I got was a wtf moment.... so today when I'm going to grill skirt steak, I'm going to connect a bunch of extension cords so that I can bring a hair dryer to my grill!!! WTF???
huh?? when you put the lid on a grill it acts as a fire oven in a way. the main difference is the smoke adds some flavor to it especially if you use chunk charcoal instead of the brickettes
I like Alton's show, but it seems he likes to make cooking more complicated. Yeah, a blow dryer on a grill? Hmm. I once followed his elaborate pancake recipe to a "T" and after all the extra work, only came up with pancakes that tasted the same as a ready made instant mix. I think he just likes to geek out sometimes for the sake of the show.
