why is everyone so paranoid about this stuff? in a blind taste test if anyone here can tell the difference in the taste of a dish cooked with a spoon that was used as opposed to a spoon that wasn't, i'd be amazed. and i highly doubt anyone here has been sick from a meal as a result of someone using a used spoon. if they were i'd blame their sterilized weakened immune systems as a result of living in a anti-bacterial paranoia.

As I was taught during my training. You use two spoons, One that removes food from the pan, and transfers it to another spoon (without touching). The second spoon is the one you taste off of. So that you're continually using only one true tasting spoon.

In Ramsay's Boiling Point he did just as you say, but the impression I got from the scene was that he was experimenting in the kitchen, and the plate he was wiping down was not one made during service.
