@cozzyk I think if you buy smoked bacon that isn't sliced, just get the butcher to hack you off an inch, then dice and fry it you will end up with what David is using. A piece of smoked ham, diced and fried would be good too.: )

@HotCurryPot ok, i guess you dont realize there's vegan parmesan alternatives now, which was implied in my comment. 2 known brands are Galaxy and/or Parma. similar idea to quorn or some other meat substitute. hope this helps :)

Those look pretty tasty alright, but checking some of your other recipes, it occurred to me that there isn't too much in your OPC cook book that isn't loaded down with mega calories. Like your Chocolate Caramel Slice, Home Made Baileys Irish Cream, Chocolate Mars Bar Crispies, Home Made Ice Cream, Chocolate Brownies, Bread and Butter Pudding, Lemon Cheesecake, Creamy Potato Bake, etc., etc., etc. I'm sure they're all delicious but holy cow, I can already feel my arteries clogging up! LOL
@whats1her1name You can either use fresh, uncooked spinach leaves and scatter them on with the crumbled feta. The other option is to fry the spinach in a little butter or olive oil until they wilt and soften, squeeze and drain them then scatter on the pastry with the feta ;)
