All the leaves are always layed out beautifully on the plate, and I eat it all! I did not know... leaves are not eaten entirely. Yet, I'm a regular at a local Italian restaurant, and the owner has never mentioned anything to me, about not eating the entire leaves.

It is not recommended to eat the entire petal. The idea is to use your teeth to scrape of the artichoke "meat" off each petal. When you do this with each petal...and work your way down to the fuzzy center- you scrape the fuzzy center (the "choke") off with a spoon to expose the best part of the artichoke: The heart- which is fully edible. @OceanMistFarms Excellent explanation. To elaborate on this further, the outer part of the petal is tough and most find it inedible. The tip of the petal also has a sharp spine at the tip to be wary of (this is why artichokes are often shown having the top cut off)

Artichoke has long been my favorite food. Here's a tip: Raw artichokes are covered in an extremely bitter compound that protects the flower from predators. Wash your hands after handling them. You don't want to taste that. Because of its bitter edge, artichoke can be made doubly mouthwatering by application of acid (lemon juice or vinegar work well) during cooking. My favorite dip: clarified butter with garlic salt. <3
@genericbotface: I thought the artichoke was more creepy than the lady. The leaves are sharp and they have furry hair inside the plant. Too much of a hassle to eat it. Don't want to choke on it. One of these days, I will try one.
