@goorackerelite some hand-pulled noodles arent made with that. for example, my uncle( who can make hand-pulled noodles) doesnt use it and i have seen him use plain flour , straight from the bag, and mix it with water to make dough, then he made the noodles in front an audience. But yes, many ppl who do make the noodles will use borax powder, seeing how it is faster and easier to make noodles
