@ipodnanno I learn most songs by ear, including Piano Man, but you can find sheets for Piano Man almost anywhere. I know the Billy Joel Complete Volume I, which is the book I use for other Billy Joel songs, has the sheet music for it, but if you want a more accurate version try The Billy Joel Keyboard Book. I still think the best way to learn any Billy Joel though is by ear, but reference sheet music as a supplement. Never rely 100% on the sheets, or you'll lose some of the Billy Joel quality.
