  • @marshalljimduncan some get payed very well, some get payed badly. it all comes down to your community, for example in England people go to supermartkets and buy meat instead of the local butcher so it's hard to make a living as a butcher there.

    but if you want to be a butcher for a company that sends the food to supermarkets, then you get payed a quite decent salary but that's only because they work really hard and get bad knees and backs after a long time of working.

  • im a slaughterman in new zealand, we do all boning on the chain we only do meat cuts on the tables, also why do you americans always cold bone in new zealand we do hot boning

  • @udda36 it´s just a "quality" thing. hot boning is easier, more efficient and all of that... but since it can produce dark and tough meat, as well as the cuts not being all exactly the same. also, since the meat is "hot", it can have bacteria growing on it. bla bla bla... i know they can solve all this problems of hot boning, but i think they just dont want to waste time and effort, and money, by taking all the extra precautions

  • When I started at super value we were all side beef, later I managed maet dept for Food-4-Less & we were all primals. Much more time for mechandising & profit building with primals but not as fun or interesting. Cuts are getting too lean now though, some fat 1/8" to 1/4"adds flavor. Glad to be retired & just eating it now.

  • We usually never get a beef carcass, the only thing beef that we cut is chuck, veal on the other hand comes in different primal cuts. Most of the beef is already cut down to smaller parts and takes little work to cut it.
