Whenever he references his own cooking it's with self-deprecation, and he's always saying how much better other chefs are. However, one does not need to be great at something to be a good critic or commentator. It can often get in the way. A strong background, keen wit, and a discerning palate are all that's needed.

I live in Chicago, went to the an ok culinary school, have had great meals in the finest restaurants in the US....Chicago is known for second class food. We do food well, and don't get the credit.

True World Foods is an organization that is started by the Moonies and funds their fundamentalist church. The Chicago Tribune did a great story on them a few years ago if you google it's very easy to find.
They have some pretty far out ideas, but among them they're very anti-gay (referring to them as 'dung eating dongs'), anti-drinking-alcohol, etc.
