All the cooks were black dudes from Louisiana who new how to cook this stuff right. I've been to back Bayous joints quite a bit in my travels, so I know. This place was a hell of alot better than the "Cajun" food that I had at the Hilton that is just off Bourbon street.
And to clear it up "Ya't": quintessential term for a New Orleans native It's derived from the local greeting, "Where y'at!" Y'at refers to the way dialect of New Orleans. We have different words and ways to express ourselves because our culture is different from the rest of the country. And excuse me Mr. Hilton hotel, but who really expects to get authentic local food at a hotel. It's best you either ask a local or know someone who can have it for you homemade.

Next time I want to convey my remarks I'll do so in a manner that is aloft the average individual's altitude of capacity. I'm SO sorry for not talking with robotic grammar all the time, but when I'm in a social situation that doesn't require it, why should I? I'm from an urban area of New Orleans.
You can't do new orleans food in Wisconsin!! Even if you got the ingredients, all the mid-western bland-ass cheeseheads would whine that it's "too spicy"...
