Pretty much just play all the way through story mode. Opens up everything.

Nope. About the only thing you probably could do is download a savefile from somewhere.

I can't figure out how to trigger that asskicking scene where you have to punch in a combination of buttons.

You have to attack them right before they attack. They will flash for like a split second. And it only works on the red guys. Dam now I feel like playing it again. The game is really long too. That first play through took a while.

The mode is called Za Obeshii (The Obeshi?) although, 'Obeshi' is the sound which the thugs make when Kenshiro finishes them off with a Hokuto Shinken special move. (i.e, when their heads explode.)
