I dont know where your experience is but did you let the dough rise and set? If it was set it would have no "rebound" and would be much firmer, yet fluffy after cooking. Not flaky..
@jmax2004 There is no comparison between a cinnabon that you buy at the store and a good homemade cinnamon roll. I would rather have one homemade cinnamon roll, made by someone who really knows how to make them, than three cinnabons.
I am so happy you posted this. I made these rolls for the first time and the dough kept contracting and I thought I was doing something wrong. I learned some helpful info in this video-thanks!
