@kazaakas Can you elaborate on how exactly to rack a gallon jug like they are using here? I'm almost a month into my first batch and I don't want to screw it up.
After 4-6 weeks or something the mead starts to bubble a lot slower, this is normal, because a lot of the alcohol has fermented already. But because of this, there is a thick layer of yeast in the bottom of the jug/carboy. You want to get rid of that layer, because over time it affects taste really bad. SO you rack it into another jug.
I have a 5 Gallon brewing up right now, its coming up on one year. The mead they are drinking at the end is Danish Mead, the brown one on the right is Viking Blod its flavored with Hibiscus and its righeous and slightly red. They also make Vikingernes Mjod ( viking Mead), which comes in a white bottle and is flavored with Hops, I cannot recommend this one Enough, it's what I want my Mead to taste like. I could drink this for the rest of my days and ask nothing more of the Gods =). ALL HAIL!

@Claews methanol will kill you. ethanol is the alchohol that is found in fermented drinks I.E.beer,mead,wine. it is also what a distillery distills from something that been fermented, mostly from grains nowadays. there are a few companies that use potatoes (the original vodka) or grapes, if it has sugar and water it can be fermented.potatoes don't have sugars. it has starch and after a short heating/cooking and an added enzyme added the starch is converted to sugars
@avelloch Yes, I meant if making mead will produce any methanol as a biproduct? Usually when you brew at home you have to be careful.. I know this is the case with vodka.

@ozzman1212 It should work, but you need to get all the honey and water mixed together very well. It might also not be very strong because the yeast might not be strong enough to survive in the alcohol it makes. You can buy specail yeasts that can survive in 30% alcohol to volume or better.
@ozzman1212 There will be alcohol after two-three weeks, but it will be better and stronger if you let it sit or age. If you are going to let it sit, I recomend seperating the yeast from the rest of the mead after the first three weeks. Pour it into another milk jug through some cheese cloth very slowly, you don't want to get it stirred up or bubbly. Then put another balloon on it and let it sit. It will continue to ferment a little bit and it will taste better. How this will taste I don't know

Hmm thats funny i made some mead but to gallon of water i used 3 pounds of honey and it doesnt taste anything of honey... Maybe it just needs to mature in bottles im not sure
@jubjub13483 i found that most recipes tend to be between 3-5 pounds of honey per gallon of water. obviously the more honey the sweeter. I prefer my mead drier which is why i tend to go on the 3 pound side of things. My meads also tend to hover around the 18% alcohol level so I need to let them stay in the bottles for a longer period of time to let the flavour settle. otherwise it has the kick of gasoline :P

@jubjub13483 Definitely. Give it a few more months and it should be drinkable. My first batch took a good 6-8 months of sitting before it was drinkable. Mead gets smoother the longer it sits.
@miguelcarvalho2008 yeah Ive been doing fir for a while. he was wrong about the oranges they don't add much flavor in the initial fermentation stage, and they didn't mix it well enough at all, but other then that this is a good way to make it.
@miguelcarvalho2008 you always want to 'rack' the mead after a month, that just means siphoning it into a new container and leaving all the sediment and oranges etc. behind. If you're serious about making it check out "epicfantasy" it's a youtube channel with more in depth videos.
Warm the honey up (while in the jug) by placing it in some warm water. It will be easier to pour, dissolve easier and not sink to the bottom of the jug like that.
@enemyofgod Just find a local brewers' shop. You can also order it online. Making "moonshine mead" like this, you could just go to the supermarket and ask for bread yeast, but brewers' yeast or champagne yeast is designed for such beverages (sorry if i'm being a total snob lol).
I make my own home brew. Well I didn't invent the brew but I bet I make the best mead in Scandinavia, and I make it the old way and spice it with a swedish flower called fläder and lingonberry. I store it in a wooden barrel and I pick the spices myself of my own land. The honey I buy from my neighbour who has beehive. The water comes from my mountain well. I make my own wild jeast to ferment it. I could get rich selling this stuff.

@confettistar Or least as good as extinct. LESS than 1% of all meat n stuff contains it. And the majority of the cases with salmonella is from foreign food. Practically nobody ever gets salmonella in Sweden.
You know sometimes I don't get the whole wait period. I recently just finished some mead (750mL) and (this will make a lot of people cringe and hate me) drank it after a week. Sure it didn't taste excellent, but it wasn't half bad and got me drunk ha. However, I did leave about 6 oz in the bottom because of yeast sediment and after a few days got around to wanting to dump the rest.
But what I noticed was that the remainder of the mead was crystal clear. Literally all of the sediment had fallen and settled on the bottom. I had to try some of it, so I poured some in a shot glass and it tasted pretty much how I would suspect a store bought mead to taste like. It was real strong too. I just wonder if I had let the whole batch sit if it would have done the same in only a few days.
Im in the process of making mead now, Fermenting well and have switched the baloon with an actuall airlock haha. If anyone else has done the same thing let me know how its goin as well

@lairofwolves Haha, only problem is that it's winter season here in sweden right now, and about -16 degree celsius (the same as 1.4 Fahrenheit) in the middle of the day, even colder during night time, so it would become ice after like only an hour or so. :P

Does the fermentation cause alot of smell? If so, is it true you can take a small plastic bottle, stuff the opening with cotton and fill the rest of the bottle with coal, and use it instead of the balloon to get red of the smell? :)
Seriously, those meads they taste in the very end ARE SO FRIGGIN EFFING DELICIOUS YOU WON'T BELIEVE IT! It's fairly expensive, but DAYUHMN, they taste good!
And the real mead is pronounced "mjöd", which is pretty much how it is spelled.

I'm thinking of making real swedish mead this summer and lots of it. If so I'm gonna buy honey from my neighbour who's a beekeeper. I was gonna use fläder or elderberries aswell, but since it's late summer now I can't use the flowers as I usually do when I make lemonade. Does anyone know if the berries taste the same as the flowers when you boil them up?
I also wanna give the tip that it's nice to add lemmon when you use elderberries. I don't think ill use it in the brew directly though.

this recipe doesnt take 6 months. after a month put it in the freezer for a day & all the yeast will sediment out, & you're good to go.
or use a gallon of fruit juice & a cup of sugar, that works great too.

@enemyofgod Just find a local brewers' shop. You can also order it online. Making "moonshine mead" like this, you could just go to the supermarket and ask for bread yeast, but brewers' yeast or champagne yeast is designed for such beverages (sorry if i'm being a total snob lol).

I make my own home brew. Well I didn't invent the brew but I bet I make the best mead in Scandinavia, and I make it the old way and spice it with a swedish flower called fläder and lingonberry. I store it in a wooden barrel and I pick the spices myself of my own land. The honey I buy from my neighbour who has beehive. The water comes from my mountain well. I make my own wild jeast to ferment it. I could get rich selling this stuff.

@confettistar Or least as good as extinct. LESS than 1% of all meat n stuff contains it. And the majority of the cases with salmonella is from foreign food. Practically nobody ever gets salmonella in Sweden.

You know sometimes I don't get the whole wait period. I recently just finished some mead (750mL) and (this will make a lot of people cringe and hate me) drank it after a week. Sure it didn't taste excellent, but it wasn't half bad and got me drunk ha. However, I did leave about 6 oz in the bottom because of yeast sediment and after a few days got around to wanting to dump the rest.

But what I noticed was that the remainder of the mead was crystal clear. Literally all of the sediment had fallen and settled on the bottom. I had to try some of it, so I poured some in a shot glass and it tasted pretty much how I would suspect a store bought mead to taste like. It was real strong too. I just wonder if I had let the whole batch sit if it would have done the same in only a few days.

@lairofwolves Haha, only problem is that it's winter season here in sweden right now, and about -16 degree celsius (the same as 1.4 Fahrenheit) in the middle of the day, even colder during night time, so it would become ice after like only an hour or so. :P

Could it work with only 0.66 gallon? (Alot easier to hide from the parents :p)
Does the fermentation cause alot of smell? If so, is it true you can take a small plastic bottle, stuff the opening with cotton and fill the rest of the bottle with coal, and use it instead of the balloon to get red of the smell? :)

Seriously, those meads they taste in the very end ARE SO FRIGGIN EFFING DELICIOUS YOU WON'T BELIEVE IT! It's fairly expensive, but DAYUHMN, they taste good!
And the real mead is pronounced "mjöd", which is pretty much how it is spelled.

I'm thinking of making real swedish mead this summer and lots of it. If so I'm gonna buy honey from my neighbour who's a beekeeper. I was gonna use fläder or elderberries aswell, but since it's late summer now I can't use the flowers as I usually do when I make lemonade. Does anyone know if the berries taste the same as the flowers when you boil them up?
I also wanna give the tip that it's nice to add lemmon when you use elderberries. I don't think ill use it in the brew directly though.
