@knowyourknife realistic? lol, the paper isnt imaginary..I kno what your saying, but 99.9% of people would be happy with an edge that cna cleanly slice through printer paper, anything that slices through newsprint is for a knife nut...but if you want "real" watch ym videos of me whittleing human hair, that puts newspaper cutting to shame

However i notice that the blade is getting a patina to it no matter how much oil i put on it. Is it alright to use a carbon blade to eat food, even if it has a patina on it? Thanks
Just got the #8 Stainless Steel and a #10 Carbon Steel versions, and I have to say that the #10 is pretty nice size, the #8 tends to be somewhat small IMO.
I sharpened my nr 8 stainless on a handstone and polished it on a strop with a bit of green compound. Cuts like a laser. When I travel I just take the strop, it is sufficient to touch it up, even after tough cutting tasks. Opinel is a great knife for travelling, light, and cheap enough to replace when lost.
I was watching a knife reviewing and the guy said that cutting paper is the quickest way to dull a knife...is that true?? Because I found it hard to believe

Do you use any other cutting tests? I feel that while your test clearly demonstrates your knife is sharp, the paper test has major limits (as does, for example, shaving hair on forearms). To me the truth about the whole issue is that a knife needs to be sharpened to a specific task, e.g. rope cutting, food prep, wood carving, box opening or what-have-you. Each of those different types of knives needs to be sharpened differently. Good job, keep posting videos :)
I agree I do different testss for different knives depending on what I need it for for example your right a straight razor will need to be farbeyond paper slicing, but a machete although effective razor sharp doesnt have to be as sharp because its for shopping...I also slice newsprint shave hair of my arms, I tried to "tree top" hair, which is cuttign hair off your body without touchign the skin, VERY HARD...

This is really dull knife - after you sharpen knife properly - try with bigger paper (A4) or newspaper - more realistic test

I own a nr.6 and nr.8 opinels. Indeed for that price you get alot of knife. Usually the only thing from France that's good is the food, but theese knives are quite nice indeed.

I would focus on the one dull spot a bit, then go back with a finer stone and go over the whole edge again to even it out...
