I'm not sure what your paring knife looks like, but the ones I've always used either bend way too much or are too small. If you have one that feels right, chances are it's too dull from overuse. I'm sure there's probably other reasons, but the boning knife is perfect as it's longer and designed for coming into contact with bones... and the chops have bones in them.
