@romadugh hey i too tried the same recipe today, but it came out "not soft buy icy." It doesn't even taste like kulfi, mine tastes like pure milk and sugar. I spent almost an hour but it came out so wrong... Aunty ji what did I do wrong?

@sharpanator In Indian cuisine, Green Cardamom is used in Sweets and Black cardamom is used in Spicy dishes. So here in this recipe it is Gree Cardamom. Hope this has helped you :)

Aunty, how do i make kulfi if i have evaporated milk and whole milk? can i make it without the bread and cornstarch then? and do i have to heat/ boil the evaporated milk?
@nads786 i did that, but because the fat content is smaller in 2 %, i had to use more, about 6.5 cups. But MAN you have to watch your milk carefully because i ended up with bits of curd here and there in the pan. It was still delicious, but i could tell after that there's a reason why mama Manjula said whole milk lol :P
I prefer white bread this dissolve with milk without leaving the after taste. Whole wheat bread has different texture, which will change the color and will leave the taste.

I tried your recipe today & followed all your instructions but still my kulfi developed ice crystals after freezing . I had to go out & the kulfi was in the freezer for more than 10 hours. Could that be a reason or should I be adding more than 1tsp of cornflour to avoid crystal formation? - Thanks

1. Can we replace bread crumbs for bread pieces, means mix Crumbs with milk in the mixture). ?
2. Can we use unsweetened condensed milk instead of boiling milk for so long...?...If we use condensed milk do we still have to use starch ?

i think in the subcontinent it would be called cornflour. in spanish i think it's probably fecula de maiz or almidon de maiz. i hope that helps.

can be few reason, may be you did not boil the milk enough, milk should become almost half in valume or you forgot to add the bread and corn starch.

I think you needed to boil the milk little longer or you forgot to add bread slice.. Kulfi should stay for days without having ice crystals.

corn starch and corn flour are very different, you can find corn starch in any gracery store in baking section.
