    Then again he is still "sealing" the meat when it was scientifically proven that you don't seal it that way, what you do with that action is add charred notes to it (which is also a good thing).

  • @0126090097 Then do the research yourself. There is far more to beef wellington than is in this video. And what is in the video is wrong. This is typical of younger generations of chefs inventing bullshit because unlike their predecessors they have not even mastered the basics. There are other reasons for decline in cuisine. It is simply not good business. The cost of such food is high, and few customers are willing to pay. They are happy to eat shit as long as the bill is cheap.

  • @pacholito24 The truth about this video is not pretty. You confuse my statements of truth with anger? I don't understand this. If any of the bullshit you tube videos on "cuisine" can earn a michelin star, then the situation concerning the decline of cuisine is much worse than i thought. I stopped looking at the decline years ago. Ask any old truly accomplished French chef, if they are still alive, and you will see true anger about what the younger generations have done with cuisine.

  • @dkyx You need another dominant taste that goes with beef. When mushrooms are in a recipe they are usually one of the stars. I bet satau spinach would do the trick.

  • @dkyx From the one I cooked, part of the benefit of the mushrooms is that it absorbs the meat juices as the meat cooks (which is a reason to not oil the mushrooms when you fry them up). Whatever you go with, I'd stuck with something that can absorb. Sorry that I don't have more hints than that.

  • Very good looking dish and I don't hesitate that Ramey is a very good chef. What I can't understand though is why he allows himself to work with chilled meat? that will make a worser meat then if it was room temperatured when he starts. Maybe the short chill doesn't reach the meat but anyway I think it's bad.

  • @Virihaure This is exactly what I was thinking when I saw what he did. obviously it came out just fine because the middle looked perfect but I've never had much luck cooking chilled meat. maybe you're right, 20 minute probably just chills/firms up the mushrooms on the outside and the middle is still room temperature.

  • @Virihaure No because with wellington (especially thicker pieces of tenderloin) if you don't chill the beef, it will be over done before the pastry has time to fluff up and turn golden brown! It's a science!

He's been around the world and admired by the best chef's in the world. You may have been in his restaurants during one of his shows where rookies cooked your food, but Ramsey himself does best. However, you're dead on correct that TV programs don't make you a stellar chef. He already was one before they ever rolled their cameras.
