You might want to try keeping the skin on during cooking and then removing or using chicken thighs instead. Is there a way you can cook for only 4 hours? Or, try cooking the breasts in more of a sauce. I still think the lack of fat eventually makes it dry up.

1. You can get celery to last a very long time, and crispy if you will clean it, cut it as you want it, and then put it in a bowl of cold water, and put it in the ice box. It really works. Will also work with lettuce.
2. You can place the chicken in the crock out at like 8, and let it go till 4 or 5 with no problem. If you are concerned about the time that it will it until it comes up to temp, you can turn it on high for an hour, and it will heart the crock.
@lcorinth I'm not entirely sure but I would try it (you can do this in the crock pot as well); just make sure to add the same type of vegetables and plenty of salt. When you make the crock pot chicken, try to go on the lower end of the time spectrum (3 hrs vs 8). The worse case scenario is that you lose 1/2 onion, a few carrots and celery stalks. Let us know the verdict.
This is great - I'm making it tomorrow. One question: Do you know if you can use the carcass afterwards to make a stock, or will all the gelatin have leached out of the bones during the slow-cooking process?

Starches could be noodles, potatoes, a quinoa dish, mashed potato and cauliflower combo, roasted potatoes, kasha/toasted buckwheat, etc. If you like a steamed/boiled potato texture, put them in the crock pot for the last hour, depending upon how big.

One difference I do which adds one more layer of flavor is brown the whole chicken on each side , then brown the vegetables for less than 2 minutes before putting into the pot. The browning takes less than 5 minutes total and the extra flavor to the final broth and chicken is amazing. Thanks for your video btw!!

Which part looked red; the breast or the leg/thigh? Some times dark meat can look red but be cooked. My inclination, without seeing it, is that if the meat was coming off of the bone, it was cooked. The best way to determine this, though, is to use an instant read thermometer and make sure it's 165 degrees F or more. Otherwise, ask for a refund from the supermarket. Hope this helps.
i cook my chicken with a cajun dry rub then cook for 5 hours oh yeah add 5 table spoons of liquid smoke and a whole onion in the cavity 4 cloves of garlic and half a stick of real butter in the cavity of course , enjoy

I've never done whole chicken in the crockpot before. This looks great, can't wait to try it. I've got one in the freezer right now.

If the temperature was right then the chicken was cooked. There is a chemical reaction that makes the meat red mostly near the bone areas and the
pink is okay. America's Test Kitchen had an episode about this and explained it.

I haven't tried stuffing it. Because you are cooking it in liquid, it might absorb the liquid and become very mushy.
You can cook pasta with it but only at the end for the same reasons. Most pasta cooks in 10 minutes; rice noodles sometimes in less time.
The size of the chicken or even small turkey depends upon the size of your crock pot.
