way too much ashes, i was taught by a koroua not to put the fire beside the hole but to have a bit of space there so when you are taking the stones out of the fire you put the stone in that bit of space and then pick up the hot stone with a spade ( THE HOT STONE <NOT THE HOT STONE AND THE ASHES) or roll with the spade into the hole as this process makes for a cleaner and tasteir cook with no ash on the kai ...good on yous kia ora
Hey Soniq- thanks for stoppig by, to answer your questions, the food is wrapped in tin foil for the meat and muslin for the veg, that is muslin cloth drapped over the parcels, when laying this be careful that this doesnt touch the rocks, because your food will taste of it. time frame of actual cooking will be about 3 hours, depending on the size. Do more research, ask more maori (everyone has an opinion!) and do a couple of practice ones, theres a long wait til xmas!

When preparing a traditional meal, i think it´s essential to get a little more in the spirit of things - gum boots, hardly traditional footwear are they? When we prepare hangis back in oz we like to do some sort of pre cook ritual and maybe a bit of a dance. I also noticed a few techniques were out when attempting the forehand spiral pass as well... another story, i know he was young but that´s when bad habits are instilled
That was a kool stuff .... We did a Hangi a year back ...and the next one is soon in June ...Just waiting for it ...Its a grt fun ....

Make sure the bricks are dry before you start as to much water in them will make them break up.
