  • Freedom of the Palet! I prefer tex-mex enchiladas. I had "authentic mexican enchiladas" in Mexico when i was a kid...Never again!

  • Looks deelish! Instead of steaming the tortillas in the microwave, we "toast" the tortillas on the open flame on top of the stove. This also dehydrates the tortilla and adds a nice smokey flavor to the dish. Great channel by the way.

  • i heard that indians dont actually use curry in authentic curry thats a seasoning that americans use is this true alton brown said it

    i heard it gets indians mad if you ask them if they want curry its offensive

  • @JazzNaySean : That is so true...we don't get curry powder in India and that is a westernized concept but having said that it's really not bad. We have quite a few dishes where we use it and are not offended by that :)

  • Thanks I love this recipe. So easy to make and substitute vegan cheese for a yummy "Mexican style" vegan meal :-) My mom does make them a little different. She makes S.L.P enchiladas and I know other Mexican ppl also make them different than she does. Its no big deal.

    Margaritas aint that traditional (I first saw one in Germany)

    Burritos+Chilli con carni + fckd taco shells aint mexican either ( I saw my first in Paris and I got diarrhea)

    Quesadillas in Mexico are COMPLETELY different from quesadillas from the USA

    Beware of Andrea´s LOL pointless response...as if we didnt know about the "raping of Mexican culture" we only made a comment clarifying it and asking others to stop it.

A mi nunca me ha pasado que alguien asume que por ser latina debo de tomar una margarita. Viviendo en los Estados hay muchas personas incultas pero tambien hay muchas personas que tienen la curiosidad de aprender la cultura como es.Pero, como nunca he tenido tus experiencias te doy toda la razon y te pido perdon. Ideas are shared, modified and adapted but still retaining it's identity. You are the type of person who gets offended by everything. That's just sad. P.S. I'M GOING TO TRY THIS RECIPE TONIGHT. LOL.

  • @leftyla I'm not telling you to never eat this atrocity. Everyone has freedom of the palet. I'm just saying it's nothing compared to real enchiladas. The bottled sauce will never even try to be half as good as a real chilli sauce made from scratch. Whenever you try real enchiladas made from a Mexican grandma, then you'll understand how I feel. P.S. calling someone an idiot over food is really not nice.

  • @Ektoree Speaking as a Real Mexican myself, I can tell you that beans IS a traditional enchilada filling.

  • it looks "ok" but if you were Mexican you should know no one in Mexico makes bean enchiladas, they are not rolled that way AND WE DO NOT ever drink Margaritas. (ive never tried one in my life and I am mexican. No one cares about margaritas here but when we travel everyone is expecting us to drink them)

    Next time make it more accurate with chicken or some other meat inside. (dont feed stereotypes)

  • @ekavd They are obviously not Mexican and they live in Texas where the "TexMex" culture is extremely influential and what does drinking margaritas have to do with Mexico? Every well educated and cultured person knows that is a very "American" thing to do. Instead of being so critical you should try making your own "authentic" enchiladas instead of being all talk. I lived in Mexico and I am from Guatemala being defensive doesn't help your "defeating" stereotype cause.

    Aqui varios dicen q las margaritas son super tradicionales. Y es FALSO (junto con el chili con carni)

    Varios han hecho los mismos comentario y las del video a uno le dijeron que se callara la boca y que esto SI era 100% autentico mexicano. Eso es lo que no me parecio inventan, se les corrige y encima se ponen a atacar.

  • The whole thing looks yum .. do u have a reipe to make vegetable broth tortillas and the refried beans... its not available in India .. and i have to say.. You ladies are doing really really well... Your like my answer to all the prayers to international cusine cause it is always nice to see what to do and how it turns out rrather and reading up and doing it...   • To be more clear on the red chili sauce... When I said blend, I meant into a puree in a blender or food processor, or just use and immersion blender. I use new mexico chilis or california chilis

  • Easy red chili sauce: Soften dried red chilis (no stems or seeds) in hot water, blend with garlic, broth, onions, cumin, and sugar. Cook some more, strain if you want. Try it!

  • You should try it with some green onions as garnish on top it gives a wonderful flavor.

  • WHAAAT?! I'm not from that continent myself but I see NOTHING WRONG with the Indianisation of all cuisine. I am already adding turmuric to most of my meals and it tastes great. I've got a curry plant growing in my garden and I keep ghee in the cupboard. We might all live longer if we ate better.

  • What a smart idea to moisten the tortillas so that you don't have to fry them! In the past I have tried just dipping them in the enchilada sauce w/out frying them first and they tend to lose their integrity and fall apart. This way, you make them pliable without all the excess fat. Brilliant!

  • This looks like a great recipe and it looks delicious! However, as a Mexican, I can say that it is not at all authentic. Mexican enchiladas do not use tomato sauce at all, but rather sauce from red chiles. They also use fresh, cheese (queso fresco) instead of the cheddar. Great recipe though. :)

  • @damasep So do you fry the corn tortillas then?

  • You are supposed to dip the them in hot oil to soften them up and then dip them in the sauce before stuffing them and rolling them up. I spray them with cooking oil and put them in the microwave to kind of do the same thing, but with less calories. I also make lasagna enchiladas, meaning that I lay the tortillas flat versus stuffing and rolling  them. This way, preparation time reduced. When it comes out of the oven, I just cut them into squares.
