  • i had made this mousse and it is soo yummy and the only reason it was "hard " is because he just took it out of the fridge

  • oh, i think it was notlight and airy because he started to fold the mixture which makes there be no air bubbles, he should have mixed it properly or whisked it so there were lots of air bubbles so it is light, airy and fluffy:)

This is because of how eggs are produced in assembly line fashion by millions of hens in cages. Taking steps to eliminate contamination would cost the corporations millions of dollars in 'lost' profits. I even had to stop making egg nog for Christmas. So sad.

    Normal cream is at 38%

    Heavy/thickened cream is at least 48%

  • when its done will it taste like 70%cacao chocolate. Like that bitter taste. I dont really like chocolate over 60% 65% maybe.. if they make that. But my friend made me try 70% once and it was wayyy to bitter.

    That said, mousse is not an easy dish to get right. A friend of mine, who is actually a very good cook, had the same problem.

  • @proudmexican111 Don't be silly! Haven't you ever bought chocolate/strawberry/other flavoured mousse from the refrigerator part of the supermarket? You'll find it's light, fluffy and nowhere near as dense as the version he's made, despite the surrounding temperature.

    And I admire Nicko for making a career out of this, but he's not a professional, trained chef (he says so in his latest video), just someone who has always enjoyed cooking as a hobby.

  • @DutchPs3Gamers For the millionth time (as I have already told other people who have commented), even if you refrigerate for several hours, a mousse should not be as hard and dense as that! Go to any supermarket and have a look at the mousses in the chilled section. You'll find that they're light and fluffy, nothing like what he's made. As much as I admire Nicko for making a career out of this, he is not a trained chef (he said so himself).

But otherwise very useful vid :) Chocolate mousse is the best thing ever :) And for the person who asked about dark chocolate, you can use other types, just remember your adding cream, which really almsot compensates for it being dark and not milk, and also remember that white chocolate is more sweet, so you might want to adjust the amounts of other ingredients.

  • Hey Nicko! Just wanted to ask, do you have to mix the cream? I don't have an electric mixer and friend mixing with a fork, but it actually got liquified more. Also, beating the egg whites was working with a fork but took nearly half an hour! D: Any tips?

  • @XXmaryXX214 e coli is something you get from faeces (i.e. shit), which is why people can get it if they don't wash their hands. you can sometimes get salmonella from old eggs, so if you use fresh ones it's fine.

    p.s. salmonella poisoning is horrible, but it doesn't usually kill. I've had it, twice, never from an egg, and never from my own cooking :/

  • i dunno if it was just me, but nicko, i think the dark chocolate makes the mousse a bit strong, i was the only one that liked it, nobody else really could finish it lol. I used that exact same chocolate and everything else, yet i think that somewhere around 50% cocoa would be better to use, thats just my opinion.

    Each time I make it; the outcome is different.

    It's thicker than pudding, more chocolatey,

    and it's important for the chocolate to melt thoroughly

    (bits of unmelted chocolate can disturb the creamy texture).

    I have yet to perfect it, but I do enjoy the flavor.

I know cross advertising is bad, but seriously try to check him out if you can. Good Eats is a pretty informative show, it's rather amazing that something with a modicum of intelligence came out in this day and age on TV.

  • @BellaOfBacardi Also soldier on with "Art of Darkness" It will explain chocolate, but then the mousse recipe starts and it gives you a lot of tips on how to avoid seizing and other hazards that await you along with various tips. Especially what to do if water ever touches it. It's good to get a few cooks to teach you how to do things. The picture becomes more clear sometimes when you get two good teachers.
