You may want to take the 'vegan ' tag off of this video. Cheese isn't vegan. It's very misleading when an actual vegan sees this video and is put under the impression that you are showing how to make a imitation 'cheese'.
I hope this doesn't offend you or anything..just a suggestion. since, I am vegan and I was mislead when i typed in 'vegan recipe' in the search bar and this came up.

Definitely! I posted this about 4 months ago, when fresh vegetables were not in season here. For most people in the U.S., that means that fresh vegetables are much more expensive! Also, there is the convenience factor that is important to a lot of people--They just won't try the vegetable if it has to be washed, peeled, cut up, etc. So, I made the judgment call to use frozen. For you, I would suggest fresh, because that is what you obviously prefer. Thanks for your comment!
Nowadays, vegetables are "quick-frozen," so I don't think they lose many of their nutrients through freezing. I would rather have frozen than none--and there are some things you can't just buy fresh all year around!
