Both wheat starch & Tapioca are very famous because they are used to make shrimp dumpling, wheat starch obviously cohtains gluten & tapioca does not. Tapioca however is very gluey, it gives the pastry the famous chewy feeling

what do you mean? isnt chinese wheat starch with gluten? and what is wrong with tapioca, does it contain gluten?
