Andy Baylor is the best exponent of cajun in Oz (there aren't many). Although he does other stuff these days his Cajun Combo played at the Rainbow for years. Their album Cajun is fantastic. Bought it off Chick at the Rainbow for $20. Those were the days. Thanks for posting.
