I think your gonna have more problems with the Dwarf Gourami than the Crayfish. Becuase they come from a family close to Bettas in which need to go to the Surface to breathe and will get territorial. Although, your tank is well under populated.
nice tank i had sand in my 10 galon and crayfish got soooo stressed so then i changed it to gravel and they were happily diging tunnels? i have caves and stuff but they still dig tunnels around the corners of the tank ( i got 2 crays ) its really weird :I and i dunno what they are doing maybe ill post a video of it one day.
the water has to be 60 degrees in order for the crayfish to be happy because crayfish only like very cold water. mine died because the water was like 79.

actually depending on speices crays can spend time in water from 60 to 88 at least that is what mine likes

Actually some can be kept in in water as low as 45 degrees

He doesnt actually... One of the guppies actually follows the Crayfish around and the crayfish doesnt care... but I guess that could always change
