  • I learned something about not pounding your meat. No pun intended. I have yet to taste some of his food but the man has given me great ideas.

  • Is the meat ready to eat after it has cooked 45 seconds on each side? Isn't it a health risk to eat meat that has only cooked for such a short time?

    You cook it longer to kill the bacterias and especially parasites.

  • @Egotistica It's beef. You should eat steak when it's nice and rare, with searing on the outside for flavour. If you're going to cook it till it's charred to cinders, don't waste your money on steak - if you're worried about bacteria ("bacterias" isn't a word), don't eat it, because it tastes like shit if it's well done. In Italy you can eat thinly sliced beef with just a bit of lemon on it, utterly uncooked - beautiful.

  • @Egotistica yeah, but chefs need the food to cook conveniently fast, so they do it and then say "it's so much better when its bloody", it's really just an habit, its like mustard in your pretzel or mayo in your burger, but they get very very passionate about it and go to the extent of saying well cooked meat is rubbish, its all a matter of taste, meh, just eat it the way you like it better, dont listen to them, the beauty of food is you can be creative about it

  • @FattyDudley It doesn't seem like a lack of respect. He's clearly an excellent manager - he knows how to get the best from people and how to get rid of the people who can't take it. It's not a counselling session. You don't need to infer this from TV series - his top chefs at his highly successful restaurants have followed him their whole careers and they're devoted to him. He wins loyalty from serious-minded folk and sorts out wheat from the chaff. Massive respect for the guy's people skills.

    It goes, Sear 45 seconds flip, Sear 45 seconds, Sniff coke, Hone knife as if sharpening, slap your own hands, and then presentation followed by creative cussing. If you can do that, then you've made a Gordon Steak.

  • Removing fat from a steak to increase the flavour? Definitely wrong... Every good cook knows that fat is part of the steak and it works just to give it more flavour, because it melts while you're cooking, creating a nice sauce as well... Gordon, I'm starting to seriously doubt you're 13 michelin stars...

    Cook it any further in this scenario and you ruin it. And in case you aren't aware...or just plain can;t cook ( ask your dinner guests what they REALLY think ) you don't serve fatty cuts of meat as steaks. Hell, that sirloin Gordon lopped the fat off of had more fat than any similar cut of beef I could find in a supermarket. If you want that fat, trim it and save it...your diners don't want to eat that shit

Searing a steak does not literally "seal in the juices", However if you compared a seared steak to a steak which had not been seared, the difference would be so noticeable that you may find yourself thinking that searing a steak will seal in the juices.

  • @AFlashInThePan The whole point of a steak Diane is #1 pan fry it. #2 thin as you can get it. #3 easy eating (no leftover fats at the end of steak). You don't really need the excess fat when each side is pan fried. The excess fat is useless when your infusing it with oil/butter which has a richer taste imo.
