Oh hello! Have you thought about intellectus 424 diet (just google it)? Ive heard some unbelivable things about it and my mate lost a ton of weight with it.
oh, and watch out for the sugar free stuff. most likely contains aspartame or another dangerous artificial sweetener that is in fact worse for you than sugar.
also, you seem to be putting your food in plastic containers. make sure it isnt a type of plastic that leeches into your food, especially if you plan on microwaving it because that will c ook the plastic into your food.
BPA is a common plastic which is also a synthetic estrogen hormone. out of balance hormones can cause cancer.
Is he freezing or just refridgerating? Personally I put as little of my food in contact with plastic as possible and use glass containers. Consuming small amounts plastic over time I believe causes health problems. If you have food cravings try drinking a glass of water with 2 TBSP celtic sea salt dissolved. Usually that nixes it and gives you a good poo = flatter tummy and motivation to stay on path.
At one time, I was doing once a month cooking. So once a week should be a snap. I think eating smaller meals is great but my DH just will not do that. I am getting him to eat smaller portions of meat, and less bread so that is a start.

instead of buying your "cheat" food in the supermarket make it yourself so you dont get all the nasty addatives and preservatives.
